Chili Con Carne Ingerdients

  • 6 large Potatoes
  • 12 tbsp Olive Oil
  • 1 stick Celery
  • 1 red Pepper
  • 1-2 tbsp Fresh Chili deseeded and chopped
  • 2 tsp Coriander
  • 1 tsp Cinnamon
  • 400 gram Kidney Beans (from a can/tin) drained
  • 800 gram Chopped Tomatoes (from a can/tin) Italian Tomatoes
  • 500 g Beef Mince free range
  • 1 (or more) pinch Salt & Pepper seasoning to taste

Ingerdients for serving

  • 1 bunch Fresh coriander
  • 1 tub Crème fresh
  • 1 bowl Grated mature hard cheese
  • 1-8 wedges Lime – is a must to complement the flavour

Instructions

  1. Heat olive oil in a large pot over medium heat. Add finely chopped onion, garlic, celery, carrots and red pepper. Cook for 5–8 minutes until softened and fragrant.
  2. Stir in fresh chilli, coriander and cinnamon with a good pinch of salt and pepper. Cook briefly to release the aromas.
  3. Add the beef mince and cook until browned, breaking it up with a spoon. Tip in the kidney beans and chopped tomatoes, then fill one empty tomato tin with water and add to the pot.
  4. Stir well, add finely chopped coriander stems, bring to the boil and reduce to a gentle simmer. Cook 1–1½ hours, stirring occasionally, until rich and thick.
  5. Serve spooned over hot baked potatoes, topped with crème fraîche, grated cheese, fresh coriander and a squeeze of lime. 🌶️

  • 800g chopped tomatoes
  • 500g beef mince free range
  • 1 or more pinch salt & pepper seasoning to taste

Equipment

  • 1 A heavy-based Le Creuset Enamel-Coated Cast Iron (24-28cm): Widely considered the best for heat retention and slow-cooking.

Method
 

Preheat the oven to 220 C – 428 F
  1. Wash potatoes and prick all over with a fork.

  2. Rub them all over with olive oil, place on a baking sheet and sprinkle with sea salt.
  3. Place in oven and bake for  45-50 min.
  4. Peel and finely chop the onion, garlic, carrots, celery and peppers.
  5. Heat a large stewing pan or pot with a good amount of olive oil.
  6. Add all your chopped vegetables, chili, cumin, cinnamon and good amount of seasoning.
  7. Cook for about 6-10 minutes, stirring until softened and lightly coloured.
  8. Add the kidney beans and tomatoes, then break up the mince as you add.
  9. Fill one of the empty tomato tins with water and pour this into the pan.
  10. Pick the leaves from the coriander and place them in the fridge.
  11. Finely chop the washed coriander stems and stir in.
  12. Bring to the boil and turn the heat down to a simmer with the lid on halfway for about an hour and a half, stirring every now and then.

Serving Method

  1. Slit the potatoes then top with chilli con carne, yoghurt, a good helping of crème fresh.
  2. Squeeze over some lime.
  3. Add more chopped chilli for those who like it hot.
